This is a artisan cheddar cheese rubbed with Hatch chilies and has bits of Hatch in this cheese.

The aroma is very subtle of hatch with the cheese itself being more of aroma not if chili.

The flavor is not much of the Hatch, it does have some notes of the chili but only where some of the bits where.

The rind is siposabley where the major flavor is but this cheese has no real flavor at all of Hatch or any other flavor but the cheddar itself

The texture is a semi-firm that becomes softer at room temperature with some oils coming out of it.
