Il Volo - Redlands, CA ( now Closed)

Established in 2015 by Husband and Wife Marina and Umberto Orlando this Italian eatery is not considered a restaurant by its owners but a Trattoria. These owners had perviously been the owners of Joe Greensleeves from 1997 till 2010.

Once seated they serve fresh cut rustica bread with a dipping oil is filled with baby tomatoes, oregano, grilled garlic, and abol chili to me there was no bite to me but to some beware that it may be a little bit spicy.

The octopus is as I was told imported. To tenderize it they ponded it by hand to tenderize it, then they boil it for hours with fennel, carrots, celery and black pepper. After they put it on the grill to sear the outside

The sauce was bland and much like a white wine gravy. The octopus was somewhat fatty and parts are mushy. They said it was grilled and did not see any trace that it was. It does need lemon juice bad to bring out a much needed brightness.

The beans are cooked perfectly with no overcooked or undercooked ones. The herbs in the sauce and barely noticeable for flavor and big a disappointment.

Apple Pacan Pie with Vanilla Gelato 

The Apples are very tender and they have no crisp bite but are loaded in the buttery sauce. The sauce is nothing but butter, rum and sugar. The pecans are somewhat undercooked for candyed ones and have the bitter note to them. They have an after bite that is somewhat chalky and drys your mouth.
