Guava BBQ Ribs: House guava-lilikoi BBQ sauce, tropical salsa, island slaw (featured on DDD).

These ribs are cooked sous Vous for 18 hours before being finished on the grill making them fall off the bone tender with very little fat.

You can really taste the essence of the pork in these ribs with a dry spice rub that is a little Cajun style and filled with herbs including rosemary oregano and cumin.

The barbecue sauce is tomato-based with the use of guava either purée or juice inside it very mild no heat to it at all and it’s more sweet than anything else due to the edition of the guava.

This island slaw is a combination of red and green cabbage with the addition of papaya and mango is a sweet sauce that is slightly creamy.

The plate consists of of two tacos in a Taro based tortilla with there chipotle sauce.

The tortilla is very dry and flavorless.

The fish is cooked through and can be a little tough.

The suce is very creamy with a very little hint of the smok note.

The beans are nothing special nor is the salsa.
